If we have a dinner experiment that goes well, that is the family likes it and there were no major disasters in the creation of the “experiment”, it is a winning recipe and I will repost it under The “Winners”. The recipes I have had continued success with will also show up here.

Ingredients:
2 Large or 3 Small Chicken Breast
Mini Crockpot
Classico Pesto Sauce 8.1 oz. Jar
This is one of the easiest, but most loved, recipes that wins at our house. Simply place you chicken breast (from frozen if you will have it cooking all day, defrosted will require 4-5 hours) in your mini crockpot. I suggest the mini as the chicken will dry and overcook in a larger pot. Pour 3/4 the pesto over the chicken and cover. At least 20 mintues (an hour or two is best) before serving, take the chicken from the pot and shed it, then place it back in the pot to finish. Depending on taste, you may wish to add the remaining pesto now or at the time of serving.
Serving suggestions: We have tried this many ways, our favorites include: 1. Serve with one Family size package of fresh tortellini prepared according to package directions. 2. Serve with Trader Joe’s Brown Rice and Quinoa Gluten Free Pasta or pasta of your choice 3. Serve with warm tortillas or pita pockets.
We have used leftovers for cold sandwich pitas the next day or to make Flat Out pizzas (just flat out wrap, a bit of olive oil and or olive oil spray and shredded mozzarella cheese in the toaster oven or oven on 400 degrees for 10 minutes)
